Here is a few of my favourit recipes

Rice cereal bars

Ingredients:
1/4 cup peanut butter
1/2 cup brown rice syrup
4 cups crispy rice cereal

Mix the peanut butter with the rice syrup. If it seems too stiff to stir, heat gently in a double boiler.

Stir this mixture with the cereal in a bowl. When done put the mixture to a lightly oiled 8" square cake pan and press the mixture firmly into the pan with a spatula.

Chill for an hour and cut into 12 bars. It can be refrigerated for several days.

Veggie pizza

Ingredients:
1 onion, roasted andsliced
1 cup canned orfresh tomato puree
1 tsp dried thyme
1 tsp chopped freshbasil
1 tsp chopped freshparsley
1 tsp dried oregano
1 tsp minced garlic
1 tsp black pepper
1/2 tsp salt
1 tsp sugar
1 commercially prepared pizzacrust
1 eggplant, oven roasted
1 zucchini, sliced 1/4inch thick and blanched
1 yellow squash, sliced1/4 inch thick and blanched
2 plum tomatoes, sliced1/4 inch thick
1 tsp chopped freshbasil

Preparation

Preheat the oven to 450 degrees. In a large bowl, mix the onions, tomato puree, thyme, basil, parsley, oregano, garlic, pepper, salt, and sugar and stir to combine. Spread the mixture over the crust.

Chop the flesh of the roasted eggplant and spread over the sauce.
Layer the zucchini, yellow squash, plum tomatoes and basil over the eggplant.

Bake the pizza for 20 to 25 minutes or until the crust is golden brown.

Chocolate cake

For the Crust:
1/4 cup margarine, melted
1 cup graham cracker crumbs

For the Filling:
1 1/4 lb. tofu (2 1/2 cubes)
1 cup rice syrup (or maple syrup)
2/3 stick margarine
1 Tbsp. vanilla
2/3 cup cocoa powder

Combine the margarine and crumbs and pat into a pie pan. Bake 7 minutes in a 350° oven.
Mix the tofu in a food processor for several minutes so that it gets very smooth. Add the other filling ingredients and mix thoroughly.

Fill the baked crust with the tofu mixture and chill.
